Ami Hot Pepper Sauce(TM)
Ami, not as sweet or as hot as Pallabi but packed with lots of flavor, is a perfect compliment to Pallabi. Having read the reviews of Ami on the Hot Sauce Blog, I made the nessecary adjustments and tweaked what ever I could get away with (luckily for my wife she was not in the building at the time). I took out the water, which was added to make a milder sauce then Pallabi , and replaced it with an equal portion of Habanero Mash. The list of ingredients now reads: Habanero Mash, Brown Sugar, Vinegar, Honey, Spices, Salt. I also extended the cooking time to insure that all the grittiness is from the spices (I use a ton).
